Additonal biomedical vitamins 



She has taken these before, but I had to order them because she ran our of these vitamins. 
They cost money but are worth it. I go all the way natural with my daughter and refuse to give
her medications. With her ABA Therapy services at home, private speech therapy weekly that we take her with my husband and her Summer ESY program that she loves and they told me that her speech improved more and I told them because she has private speech therapy now. 

I felt so happy to hear my child improves; I don't expect a cure ... I just want to hear that he is better and that makes me feel proud that I am doing a great job in all these years and my husband is helping and learning how to deal with my daughter as in her gluten-free diet and no dairy and plus accompanies me to all her speech therapies and is involved in her health care which makes me happy to know that I have someone who is not her father, but that wants to know how to learn about Autism and everything. 

Chiropractic care also helps too; which I take her weekly because it makes her feel good.

What the future will hold....

What the future will hold

You know the happiness you feel when you hear "great news"; just like if I won the lottery or something like that. Today my daughter's ESY program called me (I am not going to lie I panicked because I thought she was acting out or had a meltdown in school). The teacher noticed my voice and he knows me for months; all the teachers and assistant aides know me which I love because I want to hear their feedback on how things are or what happened with my daughter. Well, long story short... he told me what I have done with my daughter that she is using more words now and she can express herself more than a month and a half ago.

I told him that she is going to private speech therapy and she is of course going to start with a new company ABA services because I just felt the other company wasn't doing their job. The behavioral specialist for the summer who is working with my daughter and other kids told me, she can go to the district school and be in an autistic school classroom and not where she was before.

You can't imagine how happy and content that made me feel. I have read the internet, doing gluten-free, low sugar, 5% on Gluten Free cookies per week. I have read everything and am not doing medications at all on her; only strict vitamins and her vitamin D that she is low on.

Her pediatrician tested her to see if she has gluten in her system and he said that; I am doing a good job because there is no gluten at all in her body by her blood work.

If it works for my daughter I would do the impossible so I can make her future a better one; my goal is for her to communicate more with people and be able to be understood. I don't expect miracles I just expect little steps and then we will see what the future holds.

I am not the mother of the year, but I try my best to make her better in any way. She has so much love and is affectionate to me and her siblings. She does have her mood swings, but that I was told my her teacher that it's a puberty thing and a girl mood swing; not the autism.

I go every week to her speech therapy and feel joy inside when I hear from afar that she says more words and tries to make her self understood. That is what I know that I am doing the best I can.

I am a parent of a child with Autism 


I have a daughter who has autism; it's difficult because for years I blamed myself for her diagnosis and thought I did something wrong. Going to therapy I have learned that it's not my fault and have to let go of that blame that I have. 

I have done the impossible to go in Autism mom chat groups and talk to her teachers and now she is finally starting her 2nd session of private speech therapy weekly. I'm gluten - free with her and refuse to medicate my child. I take her to the chiropractic weekly and always keep communication via phone and email with her school and attend all her meetings. What my daughter was before she has changed a lot and is not as worse as before when she first had her diagnosis of autism (ASD).

With her gluten Free I make sure there is no contamination with the foods we eat and I read all labels and several websites on what contains gluten. I give her Omega capsules and vitamin D plus multivitamins that are gluten Free and buy them from her biomedical doctor. I'm trying as a parent to be the best I can be for my child and of course take care of my other child who is okay and talks too much . 

All I wish is for her words to come out more and for her to express herself more. I know there is no cure but I just baby steps then we will see how it goes. 

My worry is that she won't be able to express herself and half a life on her own later on. I want to improve and I'm doing the best I can . These vitamins and thins are costly but money will never be a issue for my child . I also give her probiotic that are expensive but the best. 

She is going to be 12 years old soon and I just know she can and I believe she can more with this private speech therapy plus school and plus summer school they have for autism kids here. 

Any moms that have ideas or stuff that they want to share are welcomed to let me know and I am a person that is not a doctor but can share my experience with my child. I did cut dairy from her and no sweets or sugar stuff .

Crema Volteada Recipe (Flan) "Dairy-Free"




Caramel (bottom layer) Instructions:
  • In the saucepan, combine 1 cup of white sugar, 1/4 cup of cold water, and 1/4 tsp. of lemon juice. Including a little lemon juice is one way to help prevent your caramel from crystallizing and seizing up as it cooks.
  • Heat in medium/high until it turns brownish, but not too brown.
  • Remove from the saucepan and pour it quickly in your pan (that you will be using to make the flan) "evenly spead the caramel and let it cool 5 minutes".
Flan Ingredients:

  • 16 oz. of unsweetened Coconut Milk
  • 16 oz. of Coconut Creamer
  • 2 cans of condensed Coconut Milk (I included the recipe in my previous post)
  • Vanilla extract (as you desire to pour)
  • 8 eggs
Flan Instructions:
  • In a large bowl add the 8 eggs and beat until they are all mixed up.
  • Add the 2 cans or 16 oz. of condensed coconut milk. "stir a little"
  • Add the 16 oz. of Coconut Creamer. "stir a little"
  • Add the 16 oz. of Coconut Milk.
  • Add the Vanilla extract
  • Mix everything together and when ready pour it in your baking pan.
* When you pour the flan ingredients you should already have put the caramel in the bottom "first"*

  • Preheat oven 350 degrees and when ready put in the oven. Make sure to have a bowl 1/2 filled of cold water and put it in the bottom rack of the oven "under" the flan pan. Fill it half so it can bowl and won't drip in the bottom of the oven. It just makes the flan more moist if you put a bowl filled with water.
  • Bake it for 1 hour 30 - 2 hours depending when you see it done.

    **when the top of the flan is brownish, that means it's done** 
    If you take it out when it's too white, then you will have the flan too soft.

Recipe for "Dairy-Free Sweetened Condensed Milk"

 
Dairy-Free Sweetened Condensed Milk Recipe
Prep Time: 5 minutes
Cook Time: 1 hour
Feel free to adjust the amount of sugar or sweetener to your taste. The recipe works best with anywhere from 1/3 to 1/2 cup of your sweetener of choice.
Ingredients
  • 1 can of unsweetened coconut milk
  • 1/3 cup- 1/2 cup granulated sugar, honey or light agave syrup
  • 1 tablespoon brown sugar (optional but adds good flavor)
Instructions :
  • Place the coconut milk, sweetener of choice, and brown sugar (if using) into a saucepan and whisk gently over medium heat for 2-3 minutes. This will help the solid bits of coconut milk melt and incorporate with the sugar.
  • When the mixture is just beginning to bubble around the edges, reduce the heat to the lowest flame/setting.
  • Set a timer for one hour (you may need to go a bit longer depending on your stove) and simmer uncovered, whisking every 5-10 minutes to release steam and aid in evaporation.
  • The mixture will reduce by about half and should be quite thick. You will also notice that it is a darker color. Remove from heat, stir thoroughly and pour into a glass jar or container. Cool in the refrigerator. It will continue to thicken as it cools.
  • Use as needed in recipes or to stir into coffee or tea.

"Vegan Gluten-Free Mocha Cake" from a website I found on-line (looks delicious) !

 
 
Ingredients:
Gluten-Free Chocolate Cake:
 

2-1/2 cups gluten-free flour blend

2 cups organic cane sugar

1 cup cocoa powder

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon sea salt
 
1 cup unsweetened coconut milk beverage (such as So Delicious Dairy Free)
 
1 cup warm water

2/3 cup mild flavor oil (such as sunflower seed, grape-seed, or canola)
2 tablespoons white vinegar

1 tablespoon vanilla extract

Vegan Coffee Buttercream:

1/2 cup dairy-free margarine (such as Earth Balance Soy-Free), softened
 
1/4 cup organic non-hydrogenated shortening
 
3 cups organic powdered sugar, sifted

1 tablespoon instant coffee granules


1 tablespoon warm water
2-3 tablespoons dairy-f ree cof f ee creamer (such as So Delicious Dairy Free Coconut Creamer)
 


1 teaspoon pure vanilla extract


 
Vegan Chocolate Ganache:
2 cups dairy-free chocolate chips

 
1/2 cup dairy-f ree cof f ee creamer (such as So Delicious Dairy Free Coconut Creamer)

Candy pearls, optional


Instructions:

For the Gluten-Free Chocolate Cake:

1. Preheat your oven to 350ºF.

2. Line the bottom of 2 8-inch round cake pans with parchment paper and spray each with cooking spray.

3. In a large mixing bowl, sift together the flour blend, sugar, cocoa powder, baking powder, baking soda and salt.
4. In a medium-sized bowl, combine the coconut milk beverage, warm water, oil, vinegar, and vanilla. Pour over the flour mixture and beat f or 1 minute.
5. Evenly divide the cake batter between the prepared cake pans, and bake for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool in pans for 5 minutes, then invert onto cooling rack to cool completely.
For the Vegan Coffee Buttercream:

6. Place the margarine and shortening in a mixing bowl, and beat f or 1 minute.

7. In a small bowl, dissolve the instant coffee in the tablespoon of warm water.

8. Add the coffee, powdered sugar, coffee creamer and vanilla to your mixing bowl, and beat for an

additional 2 minutes. Add another tablespoon or 2 of the coffee creamer, if needed, to make the

buttercream until light and fluffy.

9. To frost, place one layer of the cooled cake on serving platter or cake stand. Top with half of the

buttercream and smooth out to the edges. Place remaining buttercream in piping bag with star tip.
 
Top with the other cake layer and place in ref rigerator for 30 minutes. While it’s chilling, make the ganache.

For the Vegan Chocolate Ganache:

10. Mix the chocolate chips and coffee creamer in a small microwave-saf e bowl, and heat for 30 seconds.

Stir, and heat again in 15 second intervals, stirring in between, until the chocolate has just melted. Whisk until smooth.

11. Pour ganache over the top of the chilled cake. With an off set spatula, immediately spread the ganache

evenly on the top, then the sides of cake (ganache sets fairly quickly). Place cake back in the refrigerator for another 30 minutes.
12. Take the piping bag with remaining buttercream and pipe rosettes on the top of the cake, starting with the outer edge. If desired, sprinkle with candy pearls.
Notes:

The cake can be stored in the refrigerator, just be sure to let it sit at room temperature for a couple hours before serving.

Gluten-Free Products that are everywhere (especially Wegman's)

      I am a fast shopper now because I have learned how to read labels when I shop for Gluten-Free products. Honestly, I love going to Wegman's because they have a big section of GF foods and their prices are really good compared to other places that I have searched in the internet. Because of my daughter's diagnosis of autism, I shop gluten-free and casein-free (non dairy) foods. But, I can say that since Angelina has been eating gluten-free foods, her constipation and gastric problems have gone down 80% from what she was before starting in GF. 
       Here are a list of GF products that I was able to search on the web and find them especially where I go shopping. I will include only gluten-free products and for every taste (meat eater or non-meat eaters). Hope you find it useful my info:

For people with smartphones, you can download the application and enter your zip code and it will tell you a whole list of places http://www.findmeglutenfree.com/ .

Hope you find my information helpful !!! I can honestly say that my daughter has "zero complains" on eating gluten-free foods. 

*For people who want a variety of GF foods, do not waste your time going to "Weis Supermarket" (they do not have a great selection). Just a heads-up...

Angelina loves donuts.. so I went and bought this !!




Baby cakes Donut Maker Machine

     Angelina always loved Dunkin Donuts delicious donuts, but unfortunately they are not gluten free. I read in the internet that Dunkin Donuts was starting no gluten donuts in Chicago and maybe in the end of the year would be everywhere. I do not have time to wait for them to come out with a gluten free donut, so I decided to buy in Wegman's this donut machine. It makes them in 3 minutes only !!! The first day I bought it, I was trying to make donuts all by myself (from scratch) but it came out horrible. I searched Google and read that there were parents who made the donuts from the gluten free cake mix. Horray !! I had the Betty Crocker gluten free chocolate cake mix, so I followed all the instructions and when i was finished poured it in the donut machine. one.. two... three.. minutes and it was ready !!

Angelina says to me "Hmm Delicious mommy"! Happy child and happy mom !! Plus my older son JP and my little one Philippe love them too. The best buy I ever did.

Good job ! 

Gluten free pasta with blended spinach sauce .. "Delicious" !!!




Ingredients:
  • Almond milk
  • Fresh spinach
  • Tofuti cream cheese dairy free
  • Fresh basil
  • Go Veggie Parmesan Cheese Dairy Free
  • Garlic powder
  • Himalayan Pink Sea Salt 
  • Gluten free pasta 
  • Chopped onions
Preparation:
  • In a pan add a little olive oil and fry the onions with a little garlic powder
  • When the onions are heated for a minute or two, add the spinach and heat it for 2 minutes or until soft
  • Add the Himalayan Pink Sea Salt and fresh basil less than 2 minutes and then turn off the stove
  • In the blender, add Tofuti cream cheese dairy free 2 tablespoons with what is on your pan
  • After you add both of these things in the blender, make sure to blend it until everything is mixed well
  • Add almond milk in the blender, but no that much (I would say half the blender)
  • You want your sauce dark green and not light green
  • When you blended your ingredients, put it aside and boil your pasta
  • After the pasta is ready, add the sauce with your pasta (gluten free) 
  • Add Go Veggie Parmesan Cheese Dairy Free in top of the pasta to add flavor
Whatever sauce is left, you can save it in a mason jar (glass jar) for the following day. Angelina loves it so much !! (me too)....

Our first visit to see the doctor and so very nervous I was ...






     The first visit I took my daughter was the most nerve wrecking day for me, I had a migraine and had so much tension all over my body. It was a 1 hour plus drive for me with Angelina to see the doctor, which was passing Philadelphia. Angelina was not great and had several bad episodes when we went to see the doctor. He was asking me so many questions from the beginning of my pregnancy all the way to the present on how Angelina was. At the same time, I had Angelina scream and cry which made me have a bigger migraine. The doctor told me that it was okay for him to see how she is so he can better evaluate Angelina. 

     The doctor was happy that I already started on giving Angelina no gluten (GF) foods, but told me that I had to start her on casein free food too. In order for Angelina to improve in this type of treatment, she had to eat and drink no gluten and no casein. He put her on supplements that had no dairy and no gluten, he gave me a big red book that had everything on bio medical treatments and information on  Methylcobalamin B12 injections that I would have to inject Angelina every 3rd day (which he called Hopewell pharmacy and had them ship it to me). 

     I left that day with a lot to read and left with a bigger migraine that I came in with. I was happy in a way because the doctor told me his story on how he is a parent as well with twins with autism, how his twins improved throughout the years. He gave me a print out of a newspaper article of his life and how he thanks his wife for following every single treatment with their twins. Angelina's doctor told me that everyone in my household have to adjust to this change in food because one little mistake can alter her treatments. He mentioned how important it was to have support from everyone and especially my husband in this. 

     I had to also little by little remove Angelina's medicine from the neurologist because I was starting on bio medical medicine, which is removing all toxins from Angelina in general. He send Angelina for blood work, in which I decided to take her to St. Luke's Hospital Anderson Campus to get her blood work done there. There was so many blood test that he ordered that the lady from St. Luke's Hospital was shocked to see what her doctor ordered. OMG! The lady asked me which type of doctor is this, I told the lady that this is alternative medicine. I honestly did not care what people think of what I am doing for Angelina, I know that I have her best interest in all this and would never do nothing that would put in risk her health. 
     
     I started Angelina with her treatment two days after, I wanted to be sure to read everything that the doctor gave me. That day Angelina was completely on no gluten and no casein foods, plus she was taking her supplements that the doctor gave her. The doctor gave Angelina a schedule per week what supplements I had to start her on week per week, plus give Angelina the methyl b12 injections every third day (small injection). My older son JP helped me and was very thankful to him. I read in the website of Dr. Neubrander of this cream that I think I would try so I can inject Angelina at night so she would not see it. 

      I started giving Angelina almond milk with no gluten oatmeal for breakfast and a hard boil egg. For dinner, lunch and snacks Angelina would eat her GF pasta with spinach sauce that I make, plus gluten free pizza with GF cupcakes if she wants (apples, pretzel, veggie chips, gluten free peanut butter cookies any day). Angelina doesn't really like drinking almond milk, but I sit down with her until she drinks everything or else I would take away her iPad (which she loves). 

       I was happy the day I discovered tofu ice cream sandwiches for Angelina! WOW! I thought she would not eat them because just reading "Tofu", you would think she would hate them but she loves them. Plus, I discovered gluten free cream cheese that I prepare with her pasta with spinach sauce. Thanks to Rhea that she told me all these new discoveries.
